Whether you need a quick snack for the kids or prepping your pantry staples, here are my favorite ways to turn sourdough discard recipes into something delicious!

1. Sourdough Pancakes (Hotcakes)
Perfect for slow mornings on the homestead, these pancakes or in our home they are called “hotcakes” are soft, tangy, and so easy to make.
Ingredients:
2 cup sourdough discard
2 cup flour
2 cup milk
2 egg
2 tbsp sugar
2 tsp baking soda
Instructions:
Whisk all ingredients in a bowl until smooth.
Heat a skillet with butter and pour ¼ cup batter for each pancake.
Cook until bubbles form, flip, and cook until golden brown.
Serve with maple syrup or homemade jam from your pantry!
2. Cheesy Sourdough Crackers
These are crunchy, savory, and the perfect snack for movie night or pairing with soup.
Ingredients:
1 cup sourdough discard
1 cup flour
¼ cup melted butter
½ cup shredded cheese (cheddar or parmesan are my faves!)
½ tsp salt
Instructions:
Mix all ingredients into a dough, roll out thin, and cut into squares or fun shapes.
Bake at 350°F for 15-20 minutes or until golden and crisp.
These crackers are pantry-staple friendly and a total crowd-pleaser.
3. Sourdough Cinnamon Rolls
Because who doesn’t love a warm, gooey cinnamon roll?
Ingredients for the Dough:
1 cup sourdough discard
2 cups flour
½ cup milk
¼ cup butter, melted
1 egg
¼ cup sugar
1 tsp salt
1 tsp baking powder
Filling:
½ cup brown sugar
1 tbsp cinnamon
¼ cup melted butter
Instructions:
Mix dough ingredients until combined, knead lightly, and let rest for 30 minutes.
Roll out dough into a rectangle, spread it with melted butter, and sprinkle cinnamon and sugar.
Roll up, slice, and bake at 375°F for 20-25 minutes.
Top with your favorite icing or enjoy them as-is for the ultimate farmhouse treat!

4. Sourdough Discard Bagels
Turn your discard into chewy, homemade bagels perfect for breakfast sandwiches.
Ingredients:
1 cup sourdough discard
1 cup flour
½ cup water
1 tsp salt
1 tsp baking soda (for boiling)
Instructions:
Mix in discard, flour, water, and salt into a dough and shape into bagels.
Boil in water with baking soda for 1 minute on each side, then bake at 400°F for 20 minutes.
Top with sesame seeds, poppy seeds, or keep it classic.
5. Sourdough Discard Chocolate Chip Cookies
Chewy, slightly tangy, and loaded with chocolate—these cookies are next-level delicious!
Ingredients:
½ cup sourdough discard
1 cup flour
½ tsp baking soda
½ tsp salt
½ cup butter, softened
½ cup brown sugar
¼ cup granulated sugar
1 egg
1 tsp vanilla extract
1 cup chocolate chips
Instructions:
Cream butter, brown sugar, and granulated sugar until fluffy. Next mix in the egg, vanilla, and sourdough discard.
In a separate bowl, combine flour, baking soda, and salt. Gradually add dry ingredients to the wet mixture.
Fold in chocolate chips.
Scoop dough onto a baking sheet and chill for 30 minutes (this step is optional but gives thicker cookies).
Bake at 350°F for 10-12 minutes or until edges are golden. These cookies are perfect for satisfying sweet cravings while putting your sourdough discard to good use!
